"Don't spill"

This is a little conversation my little Kai and I had today while I was drinking some water at my desk.


Kai: "Oh mama, don't spill that water-'cuz daddy will THROW you out the window and you'll get an ouee and he'll give you spankings-MAAD ONES!"

me: laugh out loud

Kai: "mama! It's NOT funny! He's a MAAD one!"

hmm. I wonder where he gets all this?! Yes, daddy is a MAAD one, but still, really!? Out the window and MAD spankings?! lol fun times with little kids. :)

Little boys grow up someday

I don't like bugs.
I don't like anything to do with them, but when Kai's around I seem to learn a lot about them. Kai's a BUG LOVER. Roaches, ants, caterpillars, crickets, spiders, you name it, HE LOVES IT. He's read all the books that our local library has to offer on bugs, and yet, he goes back to read the same ones over and over.
Tonight, as he sat in my lap reading ME his bug books (in Japanese), I wondered what I was doing.
I don't even like bugs.
I guess that's what it means to be a mother.
"I don't care"
"I don't like them"
"Disgusting"
"ewww"
"get that away from me"
"I hate them"
all these words that would normally fill my mind with anything to do with bugs and insects disappear for a while and I find myself fascinated (or acting like it) to see Kai's smiling face.
"whoa"
"that's amazing!"
"do you like this Kai?"
"yes, mommy likes this too"
instead, all these words come out of my mouth with a smile.
Someday, Kai will be all grown up.
I hope he doesn't remember me squishing the bugs in the kitchen with my shoe.
I hope he doesn't remember me running around and screaming after a roach.
Instead, I hope he can remember the days I sucked it all up and sat there listening to him tell me ALL ABOUT them bugs.
After all, someday, my boys will be all grown up.

Real Food on a Real Budget

Time-Saving Tips for Cooking from Scratch

so today, I wanted to post something I read on moneysaving mom's blog, because it's what I truly believe in and I've slowly been learning to cook from scratch myself. I thought this post was great and wanted to share.

Quick…what’s the first objection that pops into your mind when you think about making more food from scratch?

If you’re like 90% of the moms and homemakers that I talk to, you would say that without a doubt, it’s the time factor.

Cooking from scratch simply takes more time.

You know that you should do it because:

a) It’s healthier.

b) It tastes better.

c) It will save you money.

Knowing that something is a good idea doesn’t make it any easier though. We’re still stuck with the same dilemma: If only there was more time in the day so that we could make homemade yogurt, cook brown rice instead of minute rice and make our own muffins instead of buying them or using a mix.

In my recent book, Real Food on a Real Budget: How to Eat Healthy for Less, I addressed this very issue. I knew that if it was a challenge for me (and it is), then it must be a challenge for others. How do we balance all that we need to do to manage our homes, spend time with our husbands, care for our children, do our work (either out of the home or from our homes), and still have enough time left over to make nutritious, affordable food?

Knowing what a challenge this is, I devoted an entire chapter and a large appendix in my book to sharing both my own and other women’s ideas and suggestions for making it easier to cook from scratch.

I love practical tips and I love learning what others do, because it often inspires me with small changes that I can make so that my own kitchen time is more productive.

Here is a sampling of some of my own time-saving tips included in the book:

::Use timers so that you can get things going and walk away. Oatmeal cooks while I shower and get dressed. Anything that needs to come to a boil or have 5 minutes to simmer just gets a timer, so that I can forget about what’s on the stove and get something else done in those few minutes.

::Do things at unconventional times. I like to start my homemade yogurt right after dinner, so that I can tend to it in between my evening activities and have it in the oven by bedtime so that it’s ready by morning.

::Cook and freeze beans in small portions. They are almost as quick to use as canned beans for a fraction of the price, and it’s so quick and easy to do. I soak the beans overnight, then cook them the next morning and rinse them off. When they’re cool, I put them in little baggies in 1 cup portions and stick them in the freezer. It’s great to do a couple of different beans at the same time (different pots), because they cook at the same time and the extra time to bag them once you’re already set up is so minimal.

::Pre-cook meat and poultry and freeze it in small, meal-sized amounts. Whenever I cook a whole chicken or turkey, whatever we don’t eat immediately I put into baggies in about 1 cup portions. I do the same thing if I cook several pounds of ground beef at once. It’s so great to have these small amounts already cooked in the freezer for quick or last-minute meals. I find that 1 bag is enough to just add meat to the meal, and 2 bags provides a more substantial amount of meat. Also, 1 bag of meat plus 1 bag of frozen beans combines to make very easy taco salads, fajitas or tacos.

::Have leftover meals regularly. This makes for a fast and simple meal about once a week, it prevents wasted food, and helps to clean out the fridge! I set the foods out buffet style, and we choose what we want to eat.

::Keep the kitchen well-stocked. Knowing that you always have exactly what you need on hand, or can at least make easy emergency substitutions, ensures that you’re never stuck when making a recipe. This can save a lot of time (not to mention frustration).

::Clean as you go. Doing quick cleaning tasks or washing dishes while you’re cooking makes it an easier and more pleasant chore, and saves a huge and time-consuming cleanup at the end. I take advantage of little spare moments, while waiting for water to boil, or for frying onions to soften, etc. to clean up whatever I can.

Couponing June 2010

My friend Jill and I went shopping last night and here's what I got.

Old spice deodorant--$? close to $4?
Crest toothpaste--on sale for $1.99
Rolaids--on sale for $1.50
Activia Yogurt--on sale for $2.00

MY total?
$1.00
and a big smile :)

here's the breakdown of what I actually paid:

3 boxes of Kellog's frosted flakes-.65 cents each
Old spice body wash--$.25 cents
Old spice deodorant--$.25 cents
Crest toothpaste--FREE
Rolaids--on sale for $Free PLUS I made $2 (coupon value was more than the sale price)
Activia Yogurt--$.50
because of the coupon overage of $2.01, it paid for most of the groceries-it's like making money!

Couponing myths:

1. it takes too much time
-like anything at first, it will take time to learn the game, but once you know what you're doing, it takes maybe 15-30min. of planning before you head out. Really, you should be planning before you go out shopping anyway, unless you make a lot of money and don't have a need for savings or a budget.

2. it's stuff I won't use

with couponing, one can buy hygiene products such as T.P., toothpastes, sanitary products, deodorants, razors, etc. sometimes, you can get fruits and vegetables too-now, don't tell me you don't have need for them.
The neat thing with this, is that you're always going to be buying new things-sales are different each week, hence the different products. You get to try new things each week! Sure, I wouldn't buy most of the things that I do now, if it weren't for coupons-for example, last week, Snyder's pretzels were on sale (a big bag) for $.50 cents each. My family doesn't normally eat pretzels-but because they were .50cents, this week's snack will be PRETZELS. :) The week before that, yogurt was on sale. What did we have for snack time? Yogurt and frozen yogurt :) See? You learn to USE WHAT YOU HAVE. Trust me, my grocery bill has come down quite a bit. We are always eating new things, and my budget runs about $20-30 a week for my family of four.

The key is to find the balance between TIME AND MONEY, obviously! There's always the extremist in anything. Don't become one. It really just depends on how much time you're willing to spend to save money, I suppose. You can't win both, that's for sure.
If for anything, I personally do this NOT BECAUSE WE'RE POOR, but because
1. I like to use my money "wisely" (get the most for my money)
2. For food storage. you'd be amazed at how fast you can build up a food storage with LITTLE MONEY. I don't print coupons off, nor do I spend more than 20-30min. each week to look around for sales-
Knowing how coupons work and how they can work for you is the key though! :)

OH couponing, I could go on and on about you!



Molletes de Mexico


It's simple, it's Mexican, it's "molletes"!
My friend from Mexico invited me to have breakfast with her the other day...ok, so I might have invited myself to her place (lol), but either way, the breakfast was simple, and yet delicious!

preheat oven to 350 deg.
Sub roll-spread butter on it
spread frijoles-refried beans
sprinkle whatever cheese you may have in your fridge-or slices
bake until golden on top (or cheese is melted)
DONE
add homemade salsa on top and mmm!
simple and quick breakfast, straight from Mexico to your kitchen!

I also discovered that if your family eats lots of refried beans (or lots of mexican food), it's so much more economical to buy a bag of beans and make them yourself, than buy cans of it!! I'm probably the last person on this planet to figure that out, but it was so simple, it blew me away! Not to mention it's so much healthier and you can freeze it! If anyone wants to know how to make homemade refried beans, let me know!

Double chocolate Banana Muffin

Ever wanted a more EXCITING recipe for muffins?!
Sick of dried out and plain old Banana muffins?!
These are sure to satisfy any desire to sweeten things up in your kitchen! :)

Double Chocolate Banana Muffin
1.5 C. Flour
1C. Sugar
1/4 tsp. Baking Powder
1 tsp. Baking Soda
1/4 C. Cocoa
1/2tsp. Salt
mix in bowl and set aside

1 egg
1 1/3C. ripe bananas
1/3 C. Oil
mix

add to dry ingredients (or mix dry into wet)

1 C. Chocolate chips
fold in chocolate chips

the key here is to fold everything in, not using a mixer/blender.

bake at 350 for about 15-20min. (eyeball it every once in a while-I forgot to set the timer, so this is a guess!) :)


BUTTERMILK CHOCOLATE CHIP MUFFINS

I had some leftover buttermilk in my fridge and some super ripe bananas and didn't want it to go to waste. PLUS, we're planning on taking a road trip soon, so I decided that today, I'd bake up a bunch of muffins for the trip AND to get rid of left overs. Muffins are great to freeze and defrost, so I baked today! The outcome?!
AMAZING!
I'm REALLY excited about these next two recipes!!

Buttermilk Chocolate Chip Muffins

2 cups flour
1/2 cup sugar
2 1/4 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon cinnamon
1 egg, lightly beaten
1 cup buttermilk
1 teaspoon vanilla
1/2 cup vegetable oil
1/2 cup whipping cream, beaten until soft peaks form
1 cup semisweet chocolate chips

Preheat your oven to 425 degrees. Grease muffin pans or line with paper liners, and set aside.

Combine the dry ingredients well, and set aside. In a smaller bowl, combine the egg, buttermilk, and oil, mixing well.

Use a spoon to make a well in the center of the dry ingredients. Then pour the liquid ingredients into the well.

Use the spoon to stir together JUST until the dry ingredients are almost moistened. Gently fold in the whipped cream.

Finally, fold in the chocolate chips, being careful not to over-mix.

Fill the muffin cups about 2/3 of the way full. Bake for 18-20 minutes, until the tops are lightly golden brown. Remove to racks and cool.

"Aunt Mae's Bean Dip"

Looking for that new and interesting dish to wow your guests or to take to a party/potluck? (not to mention EASY AND QUICK?!
Look no further!
I first had this at my sister in laws-LOVED it. Then I made it for Jill's baby shower today...A HIT.


1can black beans,
1 can white beans (or navy beans),
1 can black eyed peas,
1 can white corn (shoe peg corn)
1 red onion (half for a milder flavor)
handful of cilantro
3/4 sugar
1/2C. white vinegar,
1/2 veg. oil,
1 TBS tiger sauce (optional)
salt and pepper to taste

Directions:

Drain off all bean liquid and mix together.
add chopped red onion and a handful of chopped cilantro
Combine all liquids and pour over beans.
add salt and pepper to taste.
Marinate over night and serve with corn chips.

Tech support and customer service lines that hang up on you after an hour, EACH TIME you call

Kids who break things in the house by climbing on them
People who don't cooperate
people who are flakes
fish tanks that leaks 75 gal. water and turn carpet into moldy terrain
hearing that a family member is suffering from the past
"wishing" for something you shouldn't buy and being persuaded that we "need" it by others
being told by the mother of a screaming child that time outs are evil and wrong
Homework
depending on people to help you with things you can't seem to understand
being car-less for a few days when I need to run errands-again, being dependent on things/people

Ok--now, I will admit that there are two things that was good this week.
1. we got a notice saying our mortgage was going to be $400 less this month
(hope this doesn't somehow come back to make it on my "this sucks" list next week!)
2. Ronny just informed me that he got early liberty-he's coming home!...to his fish tank...but still, that's great news.

Ahh, I feel somewhat better...
now to call the tech support again!

math affair

Math and I don't get along.
Why can't I get it?
It takes me a long time to understand a concept.
I have a neighbor who's been helping me every week.
Bless his heart.
He must think there's not much going on upstairs when he tries to explain things to me.
There are things up there, I promise.
numbers dance around in my head.
laughing, they all dance around
negatives, positives, graphs, expressions, denominators, terminators, transformers,
they're all up in there...
They just don't like me.
And I don't like them much either.
Well, I've wasted enough time...
time to get back to those silly signs and numbers.
I wished math and I got along.
